Cold Berry Smoothie Bowl, with Banana Choco Ice Cream

Banana Choco ‘Ice Cream’

Ingredients:

2 ripe bananas

1/2 cup coconut yoghurt

100g 70% dark chocolate, melted

1/3 cup cashew butter

2 tsp vanilla extract

Method:

  1. Blend all ingredients together until smooth
  2. Decant into a container, and transfer to the freezer to freeze overnight

Berry Smoothie

Ingredients:

serves 2

1 cup raspberries

2 cup strawberries

1 cup almond milk

Method:

Blend all ingredients together until smooth. Transfer to freezer and allow chilling for half an hour.

To assemble the smoothie, pour the berry mix into a bowl, top with a (large!) scoop of ice cream and with an assortment of fruit- I chose to use raspberries, blueberries and bananas!

This was so refreshing and indulgent, yet healthy, vegan and gluten-free. What else could you ask for!
