Lentil, marinated tomato and Boiled Egg Breakfast

Ingredients:

Makes 2 portions

2 boiled egg

1 cup cooked lentils

1/2 cup cherry tomatoes, quartered

2 tbsp balsamic vinegar

2 tsp honey

1 tsp wholegrain mustard

1 apple, diced

1 tbsp pinenuts

handful of dried cranberries

1 tbsp olive oil

Salt to taste

Method: 

  1. Marinate the tomatoes in the balsamic, honey and mustard. Leave to stand in the mix for 20-30 minutes
  2. In a bowl, combine all ingredients. Make sure that the water used to cook the lentils has been fully drained to avoid excess liquid
  3. Season to taste with salt, and top with the boiled eggs (sliced if preferred)
  4. Drizzle over with the olive oil, and devour!
